Cooking and celebrating

Happy St Patrick's Day!

Some cooking that went on in the rig today...

Carl decided to check on how hot Miss Kitty's fur was as she was "cooking" in the sun...

... she clocked in at 114.5F

On Tuesday, we had visited Costco and got some pork ribs (actually, a *lot* of pork ribs - 3 full racks). Carl had been wanting to try a recipe to cook them in the Instant Pot and then finish them on the grill. I forgot to get pictures of the preparation (rub) and before they were cooked...


This was after they were cooked in the Instant Pot.

He then brushed BBQ sauce on them and put them on the grill outside to bring out the sugars in the BBQ sauce.

We cooked one "full rack" and ate about half of it -- they were very good! Not the best we've ever eaten, but not the worst either. We were simulating the smoking of the ribs using Liquid Smoke in the Instant Pot, so it definitely isn't the same, but good nonetheless!

Since it was St Patrick's Day, Venture Out had a parade of decorated golf carts and entertainment in the afternoon -- the first stop is near our lot, so we went there to enjoy:

Some folks really decorated their golf carts!

The first group that came were the Irish dancers.

We think we recognized some of the folks that we've line danced with!

Then they were heading out...

And yet more were coming! There were some singers in the next group, I think one golf cart had free beer, and another couple were selling ice cream bars. There were a total of about 30 golf carts participating!

We had been here for another time that they had a golf cart parade (at Christmas) (https://journeyinamazinggrace.blogspot.com/2020/12/thursday-evening-around-venture-out.html). It is fun that there are so many folks who enjoy decorating and performing for the rest of us!
