Wednesday cooking

On Wednesday, the evening meal was "soup and sandwiches", so we put our soup together and started it cooking early in the morning before our morning devotions time with the rally. We also decided to put together the breakfast casserole that we would be baking for Thursday's breakfast with the Solos (another BOF (birds-of-a-feather) group in Escapees - for single travelers).

Egg, sausage, and cheese casserole -- Sue's recipe

In the past, the Christian Fellowship BOF has done biscuits and gravy for the Solos, but we decided to try doing casseroles, fruit, and bagels this year. The biscuit preparation involves more folks being in a small area (to make the biscuits) and we thought it might be better to avoid that close of contact for this get-together.

After devotions, Carl and I went into town for a couple of hours, walking through the area called "Tyson Wells". We enjoy looking at the little shops selling all sorts of things. The "Big Tent" will not open until Saturday, and we're going to be on our way to Mexico by then... so we decided to see the vendors who were open now and just enjoy walking around.

The soups and sandwiches for supper were great! So many choices! One of the other couples had brought little ice cream cups so they could sample several soups - we think that would be a great plan for future soup pot-lucks. We had taken multiple disposable bowls but they took up a lot of room so we had to use a tray for holding them.

Thursday is the last day of our Christian Fellowship Rally. We are sure enjoying being with all of our friends!
