Sunday -- Happy Birthday, Carl! and travels resumed on Monday

Sunday was Carl's birthday -- we didn't have specific plans -- if it had been a nice day, we would have gone "to the beach", but... as it was not a very nice day, we stayed in...

... and made soup in the InstantPot.

We evaluated what we had onboard and decided that we could make Broccoli-Cheese soup -- we didn't have enough broccoli, but we had frozen California mix (broccoli, cauliflower, carrots) and some cauliflower rice too. We were also just a little short on cheddar cheese, but we had cream cheese and decided to go ahead!

The chicken broth was the last in the freezer from Jimmy and Regina's church's Brunswick stew from back in October (https://journeyinamazinggrace.blogspot.com/2022/10/ingredient-prep-day-for-brunswick-stew.html, https://journeyinamazinggrace.blogspot.com/2022/10/stuff-stew-and-q.html) -- we sure have enjoyed using that broth! Never fear, we still have plenty of rotisserie chicken (and some turkey) broth in the freezer for future soup making!

With all our substitutions, the soup came out amazingly good! We have learned that any "creamy" soup is improved dramatically by adding cream cheese to it! Yum! And, we have leftovers for upcoming days!

Sunday was very windy... as evidenced by the Newfoundland, US, and Canadian flags at the entrance to the Viking RV park all flying briskly!

It is nice to have the flags to judge if the wind is abating at all. We've also been using an online tool, Windy (https://www.windy.com/-Wind-gusts-gust?gust,51.346,-55.738,10) to see the current winds and gusts and predictions for the next hours and days.

Our plan was to leave the St Anthony area on Monday to head to St Barbe -- we were sad that we really had not been able to enjoy the scenery around St Anthony, but the next days didn't look a lot better, so it was time to move on.

On our drive out to the main road, we went past areas that we'd seen before and where we had previously looked for icebergs...

... it turned out that Monday was just a little bit less foggy, so we could see a bit more -- these were in the same harbor/bay area where the one was that I posted yesterday (from our viewing on Saturday).

Nonetheless, we continued on our way west and a little south -- looks like the road ends in the sea out there ahead of us! We'd better deploy Gracie's water-wings! Nah... the road turned along the coast.

We eventually made it to St Barbe -- we haven't planned to do much around St Barbe, but there is an RV park right by the Labrador ferry...

... Monday's ferry was on an alternate schedule, so we happened to see it loading right after we arrived at the RV park. You might notice that the skies are nearly sunny!

We are leaving Gracie and Miss Kitty at the St Barbe RV park on Tuesday, catching the Labrador ferry at 10:30am over to Blanc Sablon, Quebec -- yes, we will travel from the island of Newfoundland into Quebec, and then drive from there a short distance into Labrador. When Dwayne and I were planning our visit to Newfoundland back in 2016, we had considered visiting Newfoundland and then taking Miss Doozie on the ferry over into Labrador and taking the very long drive through Labrador into the northern part of Quebec to continue our Canadian visit. As I researched it though, I found out that the journey included a 800km gravel road with no cell service -- at that time, there were towns at the southern end of the road where you could pick up a satellite phone to use on your journey (in case you had any breakdown), and turn in the satellite phone at one of a few towns on the other end (I don't know whether that is still the case or not). We decided that was *not* a wise plan and we did not go to Labrador at all. This time, Carl and I decided to visit Labrador, but not to take the RV -- we'll stay at a historic B&B in Forteau for one night, and return via the ferry on Wednesday to Gracie and Miss Kitty. We're hoping for sunny weather and the ability to see icebergs along the coast either on the ferry or from Labrador!
